The conical steel burrs and stepped or micrometric adjustment allow for a fine grind, essential for extracting the rich coffee oils and producing a true espresso. Metric adjustment
The micrometer adjuster allows very small adjustments to be made to the grind size with a relatively large turn of the adjustment knob. This gives the barista very good control over the grind size.
