Dark roasting a fully washed Arabica is a deliberate technical choice: the fully washed process removes fruit pulp before drying, producing a clean, defined chocolate profile rather than the muddy heaviness of some unwashed dark roasts. Éclipse is intense — not murky.
The San Ignacio-Mogiana pairing is calibrated for this roast level. Peru brings structure and a degree of refinement even at dark, while Brazil's Mogiana region provides the classic chocolatey base and roundness — two origins that complement each other naturally in a dark profile.
