TAMPER ON THE EDGE

Keep your jam mat from sliding and protect your counter edge at the same time! The supergood PackEdge™ Over-Edge Pack Mat for espresso brewing and tamping has a 90-degree corner that rests on the edge of your counters, protecting them from wear and tear. The PackEdge™'s raised edge helps prevent coffee grounds from escaping and its thick, food-grade rubber construction provides excellent cushioning to help protect counters, tools, wrists and elbows.

1. Grip the tamper comfortably, with the handle sitting in the crook of your palm (like you would grip a doorknob) and the shaft of the tamper handle aligned as an extension of your forearm. It is not necessary to tighten the pestle very tightly. Hold it loosely and comfortably, keeping your wrist neutral.
2. Place the portafilter level on the PackEdge™ Over-Edge Pack Mat. Keeping the tamper level, slowly lower it onto the coffee bed and press the tamper into the counter until you feel the counter pressing down on you. That's it! There is no need for a twist of the tamper or a second stamp. Also, don't worry if you press hard enough or not. It is better to press evenly and levelly rather than pressing as hard as possible.

Pro tip: When tamping, keep your forearm perpendicular to the table and portafilter. This puts less strain on your wrist and makes it easier to settle the level.
